Cauliflower Egg Fried Rice

There are only 10 days left until we say ‘hello’ to 2017.  Where has the year gone?  It has flown by so quickly.  It was only this time last year when I thought about starting a blog and I wasn’t quite sure what kind of blog to start. Initially I called my blog ‘Finchleymum’ as I was mum that lived in Finchley (duh!).  I cringe every time I think about that name.  The objective of the blog was to share with you information about what events were going on in Finchley and its surrounding areas and also to share with you recipes of food that I enjoyed.  

As time went on I realised that there weren’t many events going on in North London to rave about but I found myself just blogging about food in general.  It was only after I attended this blogging event that I decided the name needed to go.  I was advised that since I have only been doing it for a few months that it was best to change it now than to leave it later down the line.  I’m so grateful for that advice.  

I find that people get an impression that Asian recipes are hard to master.  So I have decided  that one of my objective for this blog in 2017 is to share recipes that are simple and quick.  I will continue to share with you Chinese and Vietnamese recipes that I enjoyed as a kid growing up and other Asian recipes that I love from Thailand, Indonesia, Korea, Japan, Taiwan, Malaysian and Singaporean.    

My last post in 2016

Cauliflower Egg Fried Rice recipe will be my last post in 2016.  I decided to do this recipe as I was in the local supermarket and I saw a tub of cauliflower rice and I thought wouldn’t it be great if I used this to make egg fried rice instead of rice.   I was buzzing on the drive back home thinking  that I was some kind of genius.  Only to find out that this was nothing new!  Instead of binning the idea.  I decided well some of you might like my version of cauliflower egg fried rice.  I hope you like it!

Cauliflower Egg Fried Rice

I have decided not to share with you the step-by-step photos as I have done a video.  The video will follow shortly as I still need to edit it before I can post it on here.  But this recipes is quite simple to follow.

Recipe

Cuisine: Chinese
Prep time: 3 mins
Cook time: 7 mins
Total time: 10 mins
Serves: 2

Ingredients
1/2 tbsp of oil
2 spring onions (sliced)
2 garlic gloves (sliced)
1 shallot (chopped)
1 chilli (chopped) (optional)
300g Cauliflower rice
1/2 cup of frozen peas
2 eggs (beaten)
1tbsp of soy sauce
pinch of salt

Instructions
01. Add the oil and turn the heat to medium high
02. Fry the garlic, chilli, shallots and spring onions
03. Add the cauliflower rice and fry for a few minutes
04. Add the peas and mix it in with the the cauliflower rice
05. Push the rice to one side and add the beaten egg
06. Once the egg begins to cook then slowly mix it in with the rice
07. Add soy sauce and pinch of salt and ensure its blended evenly
08. Serve immediately

Notes
01. Gluten-free: substitute the soy sauce for gluten-free version

02. Make sure the egg is thoroughly cooked before you serving

    I’m really enjoying the theme/design of your site.
    Do you ever run into any internet browser compatibility problems?
    A couple of my blog visitors have complained about my website not working correctly in Explorer but looks great in Safari.
    Do you have any tips to help fix this problem?
