My mother used to always make me this soup when I was younger, especially when I wasn’t feeling so well. I used to hate it but now I have grown to like it but I wouldn’t say that I love it because I don’t. I will drink this soup because I know it is good for my health and it helps to re-energise my body. This Chinese chicken soup is not your usual type of soup. It contains red dates (also known as jujube) which is used to sweeten the soup but it is also good for maintaing your blood pressure. The other ingredient is goji berries. As we already know in the West that goji berries are classified as a superfood. But in the East goji berries are believed to ehance our immune system.
You can use chicken drumsticks or the left over chicken pieces from the spicy Korean chicken wings recipe to make this soup.
The red dates and gojiberries can be bought at most Asian supermarkets. Although the gojiberries are commercially known as wolfberries and that is what it will say on the packet.
How long does it take to cook?
This soup takes zero minutes to prepare and around an hour to cook but it’s full of wholesomeness.

- 3 cups of water
- 2 chicken drumsticks
- 10 red dates
- 1tbsp of goji berries
- pinch of salt (optional)
- 01. Add all the ingredients together. Bring to boil and then simmer for 1 hour. Simple!
- In general you wouldn't add salt to this soup as it's considered to be a medicinal soup. But you can add a pinch of salt if you feel the soup is bland.
- If there is any scum that comes to the surface then just scoop it away. It's best to keep this broth clear.
