What to do when you want some Taiwanese scallion pancakes but you just don’t have the time to make them and you don’t like the frozen version from the Asian supermarkets? Well, you have come to the right place. What I’m going to show you will take you less than 5 minutes.
First of all I used frozen paratha, which is a type of Indian bread. Ok, I know already what’s going through your mind – how can this possibly work right? But you need to trust me on this one. This bread is very similar to the flaky Taiwanese pancake that you’ll find at the street food markets of Taipei.
So to start, you add the frozen paratha to a pan on medium heat. No need to add oil! When the pancake starts to melt then start spreading your sliced scallion/Spring onions over the bread. Flip it over and do the same to the other side. Just keep cooking it until both sides of the bread is fully cooked. There you have it – your scallion pancake(s).
Unfortunately this recipe is not gluten-free as paratha contains wheat. I have tried looking for gluten-free frozen paratha but I just can’t find it anywhere. Although, there are many recipes on the internet showing you how to make gluten-free paratha. But then that would defeat the whole purpose of this recipe as I’m trying to show you how to make Taiwanese pancakes within 5 mins.
Add more depth…
Well, for some of you a pancake on its own isn’t going to fill you up. You can add egg and roll it up and eat it like a wrap. Yum!
This is how I eat mine…
I add one fried egg, with some grated cheese and then I add mayonnaise and Sriracha sauce. I know – weird. But it taste so good!

Step 1: Sliced up 3 scallion/spring onions per a pancake.
Step 2: Heat the frozen pancake in the pan on medium heat. No need to add oil!
Step 3: When it starts to melt quickly turn it over and add half the amount of scallion/spring onions and spread evenly on top of the pancake
Step 4: Quickly flip it over and repeat step 3
Step 5: Pancake are ready when it’s puffed up and cooked (approx 4 mins)
