Don’t know whether anyone has noticed. But I was absent last week. Yep, I’ve been a bit busy lately as it’s the Easter break right now in the UK. Usually, I would work on my blog twice a week on the days when both of my children are at school. But they have been at home lately so I’ve had absolutely no time whatsoever. Well, my mother-in-law is currently staying with us for this week therefore I can afford to spend some time working on my blog. Like right now 🙂
The recipe that I am sharing with you today is Thai salmon with green lentils. I find this dish fairly easy and quick to make, so I will generally have this for lunch if I am in a hurry. I will marinate the salmon the night before but you don’t have to marinate it for that long. I suggest that it should be marinated for at least 20 minutes. I serve it with green lentils, as it’s so quick to cook. Depending on how much green lentils you eat; it will only takes around 15 – 30 minutes to cook. So you can have both the lentils and salmon cooking at the same time. How easy is that?

- 1 Salmon Fillet ( approx 140 grams)
- ½ tbs of honey
- 1 tsp of fish sauce
- 1 garlic clove (minced)
- 1 tsp chilli flakes (optional)
- 100g green lentils
- Add Salmon, honey, fish sauce, garlic and chilli flakes to a bowl. Mix well.
- Marinate the Salmon in the fridge for at least 20 minutes.
- Add the lentils to a pan of boiling water. Follow the instructions on the packet.
- Oven bake the Salmon for 18 minutes at 180 celsius.
